What is SHU?

SHU, or Scoville Heat Units, is the standard measurement of a pepper’s heat, developed by pharmacist Wilbur Scoville in 1912. This scale quantifies the concentration of capsaicinoids, the chemical compounds responsible for the burning sensation in peppers. The higher the SHU, the hotter the pepper.

The Scoville test originally involved diluting a pepper extract in sugar water and having trained tasters determine at what dilution the heat was no longer detectable. Today, more precise methods like High-Performance Liquid Chromatography (HPLC) are used to measure capsaicin concentration, providing accurate SHU values.
